Spiced Honey Tofu

Yes, I've found it.  The ULTIMATE tofu recipe.  And while I cannot take credit for this incredible mix of flavors put together to make this amazing concoction, I do want to share it with you all. I know a lot of the Tone it up! girls experiment with tofu, so you all have to give this a try.  I'm not going to lie, I wanted to drink the marinade out of the bowl after I taste tested it. (Don't worry, I didn't!)

So my co-worker is a vegetarian and is always bringing in delicious looking homemade lunches.  One day she had this fragrant tofu on top of some greens and I had to try a bite.  So flavorful!  A pop of sweetness and just the right kick of spice. And with added Chia seeds, the girl had me hooked.

Ingredients-
- 1 Block of Extra Firm Tofu
- 1/4 cup Pure Organic Honey
- 1/4 Extra Virgin Olive Oil
- 1 Teaspoon Garlic Powder (This might be too much if you're not a garlic person)
- Salt to taste
- Black Pepper to taste
- 1/2 Tsp Paprika
- 1/2 Tsp Tumeric
- 1 Tablespoon Chia Seeds

1) Drain excess water out of Tofu
2) Cute into cubes of thin slices
3) Mix all of the ingredients above in a bowl and heat in the microwave for about 20 seconds to make it a smooth, even consistency
4) Coat each piece of tofu into the mixture (this will be messy but who cares because you'll want to lick your fingers!!)
5) Bake for about 12 minutes on each side. It should be a golden brown color.  If you like your tofu more "tough" in texture, just add a few extra minutes on each side.
The best part about it is, this recipe does not have to be limited to tofu.  I can imagine it would be excellent on chicken as well.  If anyone tries it that way, let me know how it goes.

On Sundays, I make tofu often because I like to top off my salads with the added protein during the week.  This is a great item to have ready to go for the week and can last you a few meals.  I'm also not a huge fan of salad dressings, so this tofu recipe takes care of the flavor 10 times over when it comes to a boring old salad.
